Whole Wheat Apple Snack Cake |

A great recipe from Spry Living. This makes a great after school snack. Ingredients:
1 1/2 cups whole wheat flour |
3 tablespoons natural bran |
1 1/2 teaspoons baking soda |
3/4 teaspoon cinnamon |
1/4 teaspoon nutmeg |
3 cups shredded apples |
1 1/8 cups honey |
3/8 cup safflower oil |
3/4 cup nuts (optional) |
2 medium eggs, well beaten |
3/4 teaspoon vanilla |
Directions:
1. Combine dry ingredients then stir in honey, oil and eggs. Add the vanilla, then apples and nuts (optional) 2. Mix well and put in greased 9 x 13 inch pan. Bake at 350 for 35 minutes or until it tests done. |
