I don't know how else to describe these other than full-bodied and robust. I had some leftover muesli from a recipe I used for this Fall's PAC. Having never eaten muesli (except for my baby's PAC recipe), I decided to make chocolate chip cookies with the leftover muesli. I'm so glad I did. Hope you enjoy these really different AND delicious cookies. P.S. They're healthy, too!!! Ingredients:
1 cup muesli |
3/4 cup whole wheat flour, sifted |
2/3 cup applesauce, preferably homemade |
3/4 cup light brown sugar or 3/4 cup dark brown sugar |
6 ounces chocolate chips |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
1/2 teaspoon vanilla |
1 egg |
Directions:
1. Preheat oven to 375 degrees. 2. In small bowl, sift flour, baking soda, and salt; set aside. 3. In medium bowl, mix applesauce, sugar, and vanilla. 4. Beat in the egg. 5. Add flour mixture, and mix. 6. Stir in muesli and chocolate chips ( a few less chips won't hurt). 7. Batter will be moist. 8. Drop by tablespoonfuls on lightly greased cookie sheets. 9. Bake 10-12 minutes. Mine were perfect in 12. Depends. |
