Whole Wheat and Flax Waffles |

Good for you waffle recipe with soy protien and cholesterol lowering flax. Ingredients:
1 cup whole wheat flour |
1/3 cup soy flour |
1/4 cup ground flax seeds |
1 teaspoon baking powder |
1/4 teaspoon cinnamon |
1 tablespoon maple syrup |
1 tablespoon vanilla extract |
2 tablespoons olive oil |
1 egg white |
1 1/3 cups milk |
salt, to taste |
Directions:
1. Mix together all dry ingredients in a bowl. 2. Mix together all liquid ingredients, except egg whites, in a separate bowl. 3. Beat egg white until stiff, set aside. 4. Add liquid ingredients to dry ingredients. Stir and fold in egg white. 5. Bake on hot waffle Iron. 6. Variations: add grated orange rind or fruit, such as blueberries to batter before baking. |
