Citrus, moist and sweet, delicious muffins, easy to assemble and fast to bake. Freeze very well. I highly recommend baking two batches since they´re so good.... Ingredients:
2 small tangerines |
1 cup sugar |
1 large egg |
1/2 cup milk |
1/4 cup butter, melted |
1/4 unsweetened applesauce |
2 cups flour (i used whole spelt) |
1 teaspoon baking powder |
1 teaspoon baking soda |
Directions:
1. Wash, dry and cut fruit into eighths (DO NOT PEEL). 2. Put sugar and tangerine segments into a food processor and process until finely chopped. 3. Add egg, milk and melted butter and process again. 4. Measure dry ingredients into a bowl and add liquid mixture. 5. Combine just until wet. Do not overmix. 6. Spoon into greased or paper lined muffin pan and bake at 375ºF for 12-15 minutes or until a knife inserted in the center comes out clean. 7. Let stand 5 minutes, take muffins out of pan and cool on a wire rack 8. Glaze with melted chocolate and sprinkle some chocolate chips on top. |
