Whole Pickled Green Tomatoes |

I'm absolutely nuts about these tart treats! Ingredients:
small to medium green tomatoes, romas work best for this |
2 quarts boiling water |
3 cups cider vinegar |
2 cups sugar |
2 sticks cinnamon |
2 t whole cloves |
1 cup whole ripe tabasco peppers |
2 medium sized onions, chopped |
5-10 whole cloves of garlic (to taste |
2 t whole peppercorns |
Directions:
1. Wash the tomatoes. Pack tomatoes, garlic, peppers, and onions into sterilized canning jars. Bring the water, vinegar, sugar, cinnamon and cloves to a boil. Let cool slightly and poor into the jars to fill them completely. Put the lids on, and set them in a cool place for several weeks. |
