Whole Lotta Good Apple Nut Muffins

Alteration from a Flax Meal box for Muffins
Ingredients:
1 cup whole wheat flour
1/2 cup soy flour
1/4 cup flax seed meal
3 tablespoons vegetable oil
1 egg
1 cup sugar (i used splenda mix)
1/2 cup milk
1/2 cup crushed nuts
1 cup finely diced apple
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Directions:
1. Mix dry ingredients together.
2. Then combine milk, oil, and egg. Add dry ingredients to wet ones and stir. Mixture will be thick. Fold in nuts and apples.
3. Fill 12 well-greased muffin tins 2/3 full. Bake at 350 degrees 17-20 minutes.
