This is our staple weekend breakfast pancakes. Kids really prefer this over restaurant pancakes. Ingredients:
2 eggs |
2/3 cup flax seed meal |
2 tablespoons baking powder |
2 tablespoons sugar |
1 cup flour |
1 cup whole wheat flour |
1/2 teaspoon salt |
2 cups milk |
1/2 teaspoon vanilla extract |
Directions:
1. Beat eggs until fluffy. 2. Add all other ingredients and mix gently. It's ok if it's a little lumpy. 3. Heat griddle, and pour some of the batter on. Bake 2-3 minutes on each side until golden. |
