Whole Grain Health Muffins |

These muffins contain no oil are super moist with carrots, apples and raisins. Ingredients:
1 1/2 cups whole wheat flour |
3/4 cup ground flax seeds |
3/4 cup oatmeal |
1 cup brown sugar |
2 teaspoons baking soda |
1 teaspoon baking powder |
1/2 teaspoon salt |
2 teaspoons cinnamon |
1 cup shredded carrot |
1 cup finely chopped peeled apple |
1/2 cup raisins |
3/4 cup milk |
2 eggs |
1 teaspoon vanilla |
Directions:
1. *groundflax seed (measure after grinding; coffee grinder is good for grinding flax seed) Preheat oven to 375. 2. Lightly grease muffin tin. 3. Combine all ingredients. 4. Spoon batter into muffin tins about 3/4 full. 5. Bake for 15-20 minutes. 6. Makes 12-14 muffins depending on size. |
