Whole Grain Gingerbread Cake |

This is really good and relatively healthy. Serve it hot out of the oven with vanilla ice cream or whipped cream; it's also good with warm applesauce. Ingredients:
1 cup whole wheat flour |
1 cup unbleached flour |
1 teaspoon baking soda |
3/4 teaspoon salt |
1 1/2 teaspoons cinnamon |
1 teaspoon ginger |
1/4 teaspoon clove |
1/4 cup sugar |
1/2 cup wheat germ |
1 cup buttermilk or 1 cup yogurt |
3/4 cup molasses |
1/4 cup unsweetened applesauce |
1 tablespoon oil, plus |
1 teaspoon oil |
2 eggs |
Directions:
1. Stir dry ingredients (flour through wheat germ) together in mixing bowl. 2. Add remaining ingredients and beat until smooth. 3. Pour into greased 9x9 cake pan; bake at 350 for 45-50 minutes, or until tests done. |
