Whole Grain Chocolate Chip Banana Bread |

this is a healthier whole grain version of a comfort food. Ingredients:
1 cup flour |
1 cup whole wheat flour (or white whole wheat flour) |
1 cup rolled oats |
1/2 cup sugar |
1/2 cup brown sugar |
2 teaspoons baking powder |
1 teaspoon baking soda |
1/2 teaspoon salt |
1 teaspoon cinnamon |
1 1/2 cups buttermilk |
2 eggs, beaten |
1/4 cup butter, melted |
1 cup banana, mashed (3-4) |
3/4 cup dark chocolate chips (i like minis) |
Directions:
1. mix all dry ingredients (including sugars) 2. in a separate bowl, whisk together all wet ingredients and bananas. 3. combine, stirring until just moist 4. fold in chocolate chops. 5. pour into 2 greased loaf pans. 6. bake at 350 for about 50 minutes. 7. can make muffins, reduce baking time by half. |
