Whole-Grain Blueberry / Blackberry Spice Muffins |

WONDERFUL recipe borrowed from Cooking Light and tweaked a wee bit. This is a light muffin with nice berry flavor and a hint of spice. I used frozen blueberries with excellent results. Ingredients:
1 cup white whole wheat flour |
1 cup white flour |
1 cup rolled oats |
1 cup packed dark brown sugar |
1 1/2 teaspoons baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
1 teaspoon apple pie spice |
1 cup nonfat milk |
3 tablespoons melted butter |
1 teaspoon vanilla extract |
1 large egg |
1 1/2 cups frozen blueberries |
Directions:
1. Preheat oven to 400. 2. Lightly spoon flour into dry measuring cups, level with a knife. Combine flour and next 6 ingredients (through apple pie spice) in a large bowl. Make a well in the center of the mixture. Combine milk, butter, vanilla and egg in a small bowl. Add to flour mixture stirring until just moist. Gently stir in berries. 3. Spray each muffin tin with nonstick spray. 4. I used a large Pampered Chef scoop and put one scoop into each muffin tin. Bake 400 for 16 minutes or until knife inserted in middle comes out clean. |
