Whole Grain Angel Hair with Pistachio and Basil Pesto, Cherry Tomatoes and Black Olives |

Making delicious pesto is a snap with this crowd-pleasing Whole Grain Pasta recipe. Ingredients:
1 box barilla® whole grain angel hair |
1/2 cup extra virgin olive oil |
1 clove garlic |
2 tablespoons grated parmigiano reggiano cheese |
2/3 cup pistachio nuts |
10 leaves fresh basil |
salt and black pepper to taste |
1/2 cup kalamata olives, pitted and sliced |
1 pint cherry tomatoes, quartered |
Directions:
1. Bring a large pot of water to a boil. 2. Meanwhile, in a blender, combine garlic, cheese, pistachio and basil. Add olive oil, salt and pepper and pulse for 15 seconds to make the pesto. 3. Cook pasta according to directions; drain reserving 1/2 cup of the cooking water. 4. In bowl toss pasta with pesto, olives and tomatoes; slowly add cooking water as needed. |
