Ingredients:
1/2 cup shortening |
1 1/2 cups sugar |
2 1/4 cups sifted cake flour |
2 1/2 teaspoons baking powder |
1/2 teaspoon salt |
1 cup milk |
1 teaspoon vanilla extract |
4 egg whites |
lemon filling |
lemon cream frosting |
Directions:
1. Cream shortening; gradually add sugar, beating well. Combine flour, baking powder, and salt; add to creamed mixture alternately with milk, beginning and ending with flour mixture. Mix well after each addition. Stir in vanilla. 2. Beat egg whites (at room temperature) until stiff peaks form. Gently fold into batter. 3. Pour batter into 2 greased and floured 8 - inch round cake pans. Bake at 375° for 20 to 25 minutes or until a wooden pick inserted in center comes out clean. Cool in pans 10 minutes; remove layers from pans, and let cool completely. 4. Spread Lemon Filling between layers; spread top and sides with Lemon Cream Frosting. |
