My hero Jacques Pepin does something like this. The ingredients and amounts can be played around with very freely. Use whatever kind of cheese you like. (I normally throw in whatever leftover odd bits are in the fridge,,, the more variety , the better.) Ingredients:
3 -4 ounces cheddar cheese |
2 -4 ounces blue cheese |
4 ounces cream cheese |
1/4 cup butter, cut in pieces |
1 roasted red pepper |
1 -2 garlic clove |
2 -4 tablespoons white wine |
2 -6 drops your favorite hot sauce |
Directions:
1. Peel and quarter garlic cloves. 2. Combine all ingredients in bowl of food processor. 3. Process until smooth and creamy. |
