White Wine Braised Sauerkraut |

This is a fantastic recipe that I obtained from a friend a few months back. She served this with stuffed pork tenderloin and it was great. Ingredients:
4 pounds sauerkraut |
2 tablespoons unsalted butter |
2 ounces bacon diced |
1 small white onion |
1 teaspoon caraway seed |
2 cups dry white wine |
Directions:
1. Rinser sauerkraut well then soak in water for 2 hours, changing water periodically. 2. Set pressure cooker over medium heat then add butter and bacon 3. Cook 3 minutes then add caraway seeds and onions and cook 3 minutes. 4. Add sauerkraut then stir to coat and cook 3 minutes. 5. Add wine and cook 15 minutes at high pressure. 6. Remove from heat and let stand until depressurized. 7. Serve immediately. |
