White Wine Apples On Creamy Clouds |

this is an apple dessert you can prepare well ahead of dinner - even if your guests say: no dessert, please - THIS they will eat. Ingredients:
6 evenly sized apples (i used jonagold) |
1/2 litre white wine (i used a riesling, medium dry) |
1 vanilla bean, whole |
150 gr sugar |
juice and grated rind of 1 lemon |
200 gr (approx.) apricot jam |
2 cups (approx.) whipping cream |
2 tbsp calvados |
Directions:
1. peel apples, leaving the stem intact (looks prettier) 2. but removing the 'dried apple blossom') 3. stir together whitte wine, the marrow of the vanilla bean, sugar, lemon juice and grated rind 4. bring to boil 5. reduce heat 6. put in apples, let simmer at low heat approx. 20 minutes or until apples are not quite done - they should NOT lose their shape or get wrinkles :-) 7. let cool in liquid 8. remove apples 9. reduce liquid until about 1/3 is left 10. stir in apricot jam until it is dissolved 11. take one apple at a time, turning, brushing with this liquid until they are all evenly coated. repeat, until they are 'crusted' all over 12. now, beat the whipping cream -'perfuming' it with the Calvados and about 2 TBSP of apricot jam - until just fluffy - do not overbeat! 13. put cream on nice serving dish, place apples onto cream. i decorate this with fresh mint leaves |
