Fluffy tomato foam. Ingredients:
400 g tomatoes |
2-3 basil leaves |
1 twig thyme |
1 teaspoon sugar |
1/2 teaspoon salt |
1 teaspoon elder vinegar or white wine vinegar |
2 gelatine leaves |
100 ml heavy cream |
Directions:
1. Chop tomatos and mash. 2. Add herbs, sugar, salt and bring to boil. 3. Put a kitchen cloth in a sieve and let the white tomato juice drip. 4. Warm it, add gelatine and vinegar. 5. Beat over icy water until frothy. 6. Stir in beaten heavy cream. 7. Leave for 1 hour in the fridge. |
