White Spaghetti & Meatballs - to put over pasta Ingredients:
1 1/2 lb ground chicken |
1 clove garlic |
1 egg |
4 oz breadcrumbs |
1 t italian seasoning |
8 oz mushrooms, sliced |
1/8 t nutmeg, ground |
1 t olive oil |
1 clove garlic, minced |
2 t flour, all-purpose |
1/2 cup dry white wine |
3 cups low sodium chicken broth |
8 oz cream cheese |
1/4 cup parsley, chopped |
Directions:
1. Mince one clove of garlic and mix with ground chicken 2. Stir in egg,breadcrumbs and italian seasoning; cover & chill 20 minutes. 3. Shape mixture into 1 balls. 4. Place on a rack sprayed with PAM into a foiled lined pan. 5. Bake at 375 for 13 minutes 6. Saute mushrooms and nutmeg in hot oil in a Dutch oven over medium-high for 8-10 minutes. 7. Add minced garlic; saute 1 more minute. 8. Sprinkle with flour; cook one more minute stirring constantly. 9. Add wine and scrap drippings. 10. Whisk in broth, reduce heat and simmer 15 minutes, stirring occasionally. 11. Add cream cheese, whicking until smooth and sauce has thickened. 12. Add meatballs and parsley to sauce and simmer 10 minutes. 13. Serve over pasta. |
