This recipe came from an estate sale. I obtained it when I purchased the family collection from the McNabb Estate in Malakoff, Texas in 1997. Ingredients:
1 cup sweet butter |
1 cup sugar |
8 egg whites, beaten |
grated rind of 1 lemon |
2 cups pastry flour |
1/2 teaspoon mace |
2 ounces each candied cherries, citron and sliced almonds |
Directions:
1. Cream butter then slowly add sugar and beat until fluffy. 2. Stiffly beat whites and add to butter mixture. 3. Add grated lemon rind. 4. Sift flour and mace and mix through the sliced fruit and nuts. 5. Add to the first mixture and bake in tube pan at 300 for 1 hour. |
