WHITE POTATO PIE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Crenshaw Estate in Justin, Texas in 2002.
Ingredients:
2 potatoes peeled boiled and mashed
2/3 cup butter
1 cup white granulated sugar
1/2 teaspoon baking powder
1/8 teaspoon salt
1/2 cup heavy whipping cream
1/2 cup milk
2 teaspoons lemon zest
2 tablespoons lemon juice
1 teaspoon vanilla extract
4 eggs beaten
2 pie shells
Directions:
1. Preheat oven to 350.
2. In a medium bowl mix sugar, baking powder and salt then add potatoes and butter and mix well.
3. Gradually add whipping cream and milk and stir until well blended.
4. Stir in lemon rind, juice, vanilla and nutmeg then add beaten eggs and mix well.
5. Pour mixture into pie shells and put in preheated oven then bake 1 hour.
