White Pizza/Pasta Sauce

Great for vegetable pizza, meat pizza, chicken and pasta
Ingredients:
1 tablespoon olive oil
2 tablespoons butter
3 tablespoons flour
1 cup milk
1/4 cup onion, finely chopped
1 large garlic cloves or 2 small garlic cloves, minced
1/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons fresh basil, minced (can sub dried basil)
1/2 teaspoon oregano (optional)
1/2 cup parmesan cheese (can use italian 3 blend cheese) or 1/2 cup mozzarella cheese, shredded (can use italian 3 blend cheese)
Directions:
1. Heat olive oil and butter in a small saucepan, add chopped onion and garlic.
2. Add flour and whisk til flour is cooked and onion is translucent - 2 or 3 minutes.
3. Add milk, salt, pepper, basil, oregano (if using), and shredded cheese.
4. Whisk and cook until cheese is melted and sauce has thickened slightly. Remove from heat.
5. ** Careful not to get too thick. Should be thick like pizza or spaghetti sauce. Add more milk if needed.
6. Brush your favorite pizza dough with olive oil, spread sauce, add your favorite toppings and bake per dough instructions.
7. *** Makes enough sauce for 2 medium pizzas. Freezes beautifully. Just thaw at room temperature. Also great for calzone, or sauce for chicken, or chicken and broccoli with fettucini. Tweak away fellow tweakers!
