Another recipe from Brother Boniface, a 95 year old Trappist Monk from Mepkin Abbey in Moncks Corner, SC. He still helps in the kitchen to this day, coming in his wheelchair to chop vegetables. I made this recipe in my breadmaker with 5 c. flour - made one large, delicious loaf.
Ingredients:
3 packages active dry yeast
3/4 cup water
3/4 cup warm milk
1/2 cup honey
3 tablespoons butter or 3 tablespoons margarine, melted
1 1/2 teaspoons salt
5 -6 cups bread flour
Directions:
1. Preheat oven to 375, or use your bread machine.
2. If using bread machine, add ingredients as recommended by your manufacturer.
3. If making by hand, dissolve yeast in warm water.
4. Add warm milk, honey, butter and salt.
5. Add enough flour to make a soft dough, and knead on a floured board until smooth and elastic, or to a count of 200.
6. Let rise and double in size.
7. Punch down and let rise again halfway.
8. Roll into 2 loaves and place in 2 greased loaf pans.
9. Let rise to about 1 1/2 inches above the pan top.
10. Bake at 375 for approximately 35 minutes, or until the loaves sound hollow when tapped.
11. near the end of the baking time, lower the oven temperature to 350.
12. Remove from oven and let cool.
