Ingredients:
1/2 cup shortening
1 1/4 cups sugar
2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup milk
1 teaspoon vanilla extract
3 egg whites
Directions:
1. Cream shortening; gradually add sugar, beating well.
2. Combine flour, baking powder, and salt; add to creamed mixture alternately with milk, beginning and ending with flour mixture. Stir in vanilla.
3. Beat egg whites (at room temperature) until stiff peaks form; fold into batter.
4. Pour batter into 2 greased and floured 8-inch round or square cake pans. Bake at 350° for 25 minutes or until a wooden pick inserted in center comes out clean. Cool in pans 10 minutes; remove layers from pans, and let cool completely.
