This is an alternative to traditional lasagne, but it's full of flavor, easy to make and is a nice change!
Ingredients:
3/4 cup onion, diced
1/2 cup red pepper, diced
3 -4 garlic cloves, minced
1/4 cup basil, chopped
1 tablespoon cooking oil
1 cup ricotta cheese
1/2 cup mozzarella cheese, grated
1/2 cup parmesan cheese, grated
3/4 cup frozen spinach, thawed and cooked
2 cups alfredo sauce (i use a jar of classico four cheese)
0.5 (375 g) package lasagna noodles, cooked (dreamfields works well)
1 lb ground beef or 1 lb ground chicken, cooked
1/2 cup mozzarella cheese, grated
1/2 cup parmesan cheese, grated
Directions:
1. Preheat oven to 375 degrees.
2. In cooking oil, sautee onions, red peppers and garlic until soft. Mix in jar of alfredo sauce and cooked meat.
3. In a bowl, mix together ricotta, mozzarella, parmesan, spinach and basil.
4. Layer meat mixture, then noodles, then cheese mixture. Repeat.
5. Top with remaining mozzarella and parmesan.
6. Bake for 40 minutes.
