This is an alternative to traditional lasagne, but it's full of flavor, easy to make and is a nice change! Ingredients:
3/4 cup onion, diced |
1/2 cup red pepper, diced |
3 -4 garlic cloves, minced |
1/4 cup basil, chopped |
1 tablespoon cooking oil |
1 cup ricotta cheese |
1/2 cup mozzarella cheese, grated |
1/2 cup parmesan cheese, grated |
3/4 cup frozen spinach, thawed and cooked |
2 cups alfredo sauce (i use a jar of classico four cheese) |
0.5 (375 g) package lasagna noodles, cooked (dreamfields works well) |
1 lb ground beef or 1 lb ground chicken, cooked |
1/2 cup mozzarella cheese, grated |
1/2 cup parmesan cheese, grated |
Directions:
1. Preheat oven to 375 degrees. 2. In cooking oil, sautee onions, red peppers and garlic until soft. Mix in jar of alfredo sauce and cooked meat. 3. In a bowl, mix together ricotta, mozzarella, parmesan, spinach and basil. 4. Layer meat mixture, then noodles, then cheese mixture. Repeat. 5. Top with remaining mozzarella and parmesan. 6. Bake for 40 minutes. |
