This comes from an old Nova Scotia cookbook Ingredients:
1 lb butter |
2 cups sugar |
8 eggs |
1 lemon, juice and rind of, grated |
3 cups flour |
2 teaspoons baking powder |
1 teaspoon salt |
1 1/2 lbs white raisins |
1 lb red glazed cherries |
1 lb green glazed cherries |
1/2 lb blanched almond |
1/2 lb cut mixed peel |
1/2 lb cut citron |
1/2 lb pineapple ring |
1 cup flour (for dusting fruit) |
Directions:
1. Prepare and dust fruit with one cup flour. 2. Cream butter and sugar. 3. Add eggs, juice and rind of lemon. 4. Combine flour, baking powder, and salt. 5. Add mixing well. 6. Add prepared fruit. 7. Put in greased tins which have been lined with one layer of brown paper and one layer of waxed paper. 8. bake 300F reducing heat to 275F after first half hour of baking to prevent cake from becoming too brown. 9. Cooking time approx 3 hours. |
