In the Amish communities this dessert is served on Thanksgiving in hopes of bringing a white Christmas Ingredients:
1 tablespoon unflavored gelatin |
1/4 cup cold water |
1 cup sugar, divided |
4 tablespoons flour |
1/2 teaspoon salt |
1 1/2 cups milk |
3/4 teaspoon vanilla |
1/4 teaspoon almond extract |
1/2 cup whipped cream |
3 egg whites |
1/4 teaspoon cream of tartar |
1 cup flaked coconut |
18 inches pie crusts |
Directions:
1. in a small bowl soak gelatin in water. 2. in a saucepan, mix 1/2 cup sugar, flour,salt and milk cook over low heat stirring until mixture comes to a boil. 3. boil for 1 minute and remove from heat. 4. stir in softened gelatin and cool. 5. when Partially set beat until smooth. 6. Blend in vanilla, almond extract and whipped cream. 7. in a seperate bowl beat eggs and cream of tartar. 8. add 1/2 cup sugar and beat until soft peaks form. 9. fold into gelatin mixture then fold in baked coconut. 10. divide equally into pie shells. |
