Another must for my cookie exchange and holiday gift trays. This is a big hit every year. Enjoy. Ingredients:
8 ounces white chocolate |
48 pecan halves |
6 tablespoons unsalted butter at room temperature |
1-1/2 tablespoons water |
1 large egg yolk |
Directions:
1. Preheat oven to 300. 2. Set aside a wax paper lined baking sheet. 3. Chop white chocolate into small pieces and set aside. 4. Toast nuts on a baking sheet in a single layer for 8 minutes then set them aside. 5. In top of a double boiler over hot not boiling water melt chocolate and butter in the water. 6. Stir until smooth then pour into a bowl and add the yolk. 7. Continue beating until mixture is fluffy and cooled to room temperature. 8. Chill for 4 hours then remove from refrigerator and form into 1 balls. 9. Sandwich between 2 nut halves then chill until ready to serve. |
