White Chocolate Strawberry Mousse |

Elegant enough to be served in your finest stemware but super easy! Ingredients:
20 ounces good quality white chocolate |
1 quart fresh strawberries |
1/2 cup strawberry jam |
2 cups heavy whipping cream, whipped stiff |
6 egg whites, stiffly beaten |
Directions:
1. Melt chocolate in the top of a double boiler; set aside. 2. Puree the strawberries; strain and reserve the juice. 3. Place the berries in a saucepan, add the jam and cook over medium-low heat until strawberries thicken. 4. Remove from heat and cool slightly. 5. Fold strawberries into melted white chocolate. 6. Fold in whipped cream. 7. Fold in egg whites. |
