White Chocolate Pound Cake |

This was simplified from it's original recipe but lost none of its flavor nor texture. Ingredients:
8 (1 oz.) squares of white chocolate |
1 cup (2 sticks) butter, softened |
2 cups sugar |
5 eggs |
2 1/2 tsp. vanilla extract |
3 cups cake flour |
1 tsp. baking powder |
1/2 tsp. salt |
1/4 tsp. baking soda |
1 cup ricotta cheese |
Directions:
1. Preheat oven to 350 degrees. 2. Spray a 10 bunt pan with non-stick spray. 3. Melt white chocolate 4. In a large mixing bowl cream butter and sugar until light and fluffy, about 5 minutes. 5. Add 1 egg at a time beating well after each addition. 6. Beat in extracts and melted white chocolate. 7. Combine flour, baking powder, salt and baking soda 8. Add about 1/3 of the flour to creamed mix 9. Add about 1/2 of the ricotta cheese 10. Add 1/3 of the flower 11. Add remaining ricotta cheese 12. Add remaining flour 13. Beat just until completely combined. 14. Pour into bundt pan 15. Bake 60 minutes or until a knife inserted near the center comes out clean. 16. Let cake cool 10 minutes before removing from pan. |
