White Chocolate Passionfruit Cheesecake |

A very sweet cheesecake that seems a little lighter than most of my others. Maybe because it is a bit sweeter. Maybe!?! You can also substitute lime extract for the passionfruit for a variation. Ingredients:

1 1/2 pounds philly cream cheese |
3/4 cup sugar |
3 large eggs |
10 ounces white chocolate, melted and cooled |
1 ounce passionfruit extract(bickford flavors) |
1/2 cup heavy cream |
Directions:
1. Preheat the oven to 350^. 2. Blend cream cheese and sugar until smooth. 3. Add eggs one at a time. 4. Fold in melted chocolate. 5. Add extract and cream, mixing thoroughly. 6. Pour into prepared pan. 7. Bake at 350^ for 1 hour, or until sides are set. 8. Let cool and refrigerate before serving. |
