White Chocolate Mousse With Strawberry Swirl |

These are decadent. I often serve them at baby or bridal showers since they are so pretty. Everyone raves about them. Ingredients:
white chocolate mousse with raspberry swirl |
1 tablespoon cold water |
1/2 teaspoon unflavored gelatin |
1/2 cup heavy whipping cream |
3 ounces white chocolate |
1/4 cup pureed raspberries |
15 miniature phyllo cups |
1/4 cup halved raspberries for garnish |
Directions:
1. In a small pan combine water and gelatin then allow to stand 1 minute to soften. 2. Add 2 tablespoons of heavy cream then stir over low heat until gelatin dissolves. 3. Add white chocolate and stir until melted. 4. Chill until cool but not set about 10 minutes. 5. In a small chilled bowl whip remaining heavy cream to full volume. 6. Fold whipped cream into cooled chocolate. 7. Drizzle pureed raspberries onto cooled chocolate. 8. Run a knife through chocolate to create raspberry swirls. 9. Chill for 1 hour. 10. Spoon or pipe 2 teaspoons of filling into each shell then garnish with raspberry half. 11. Serve immediately. |
