White Chocolate Mousse With Strawberry Sauce |

WHITE CHOCOLATE MOUSSE WITH STRAWBERRY SAUCE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Fielder Estate in Justin, Texas in 1988. Ingredients:
1 teaspoon unflavored gelatin |
1/4 cup cold water |
1 cup strawberry sauce (below) |
7 large egg yolks |
8 ounces white chocolate |
1 cup whipping cream |

1 pound fresh strawberries |
3 tablespoons granulated sugar |
1 tablespoon lemon juice |
Directions:
1. Soften gelatin by sprinkling it into the cold water and allowing it to soften 10 minutes. 2. Place strawberries, lemon juice and sugar in a soft pan and cook over gentle heat for 10 minutes. 3. Blend to a smooth sauce then place 2 tablespoons sauce into bottom of 6 chilled wine glasses. 4. Combine egg yolks and gelatin in a double boiler and whisk briskly over medium low heat. 5. Continue cooking until mixture is thick enough to form soft peaks. 6. Remove from heat and transfer to a large bowl to cool slightly. 7. Place white chocolate in a microwavable bowl and heat on medium for 30 seconds. 8. Remove bowl from microwave and stir with a fork. 9. When chocolate is thoroughly melted fold it into the egg mixture. 10. Whip the heavy cream until stiff peaks form. 11. Fold into the egg and chocolate mixture with a rubber spatula. 12. Carefully pour mousse into the glasses over the sauce then chill at least 5 hours. |
