White Chocolate Lime Mousse |

This is a very impressive dessert that is bursting with great flavor. Not only is in pretty to serve it is elegant in taste. I got this recipe from a co-worker. It is fabulous. Enjoy Ingredients:
1-1/2 teaspoons unflavored gelatin |
2 tablespoons cold water |
8 ounces white chocolate chopped |
2/3 cup heavy cream |
5 tablespoons lime juice |
rind of 1 lime grated |
2 egg whites |
1/8 teaspoon salt |
2 teaspoons superfine sugar |
lime zest to decorate |
Directions:
1. Sprinkle gelatin over water in a cup and leave for 5 minutes to turn spongy. 2. Put cup in a bowl of hot water and let gelatin dissolve. 3. Carefully melt chocolate in a double boiler. 4. Whip cream until it forms soft peaks. 5. Stir a large spoonful of cream into chocolate. 6. Add gelatin, lime juice and rind then fold in remaining cream. 7. Whisk egg whites with salt until they form soft peaks then add sugar and whisk 30 seconds more. 8. Fold a large spoonful of egg whites into chocolate then fold in remaining whites. 9. Spoon mixture into 6 ramekins and chill 6 hours. 10. Garnish with lime zest and serve. |
