Bite into the flavors of fruit, white chocolate & nuts that make up this delicious cake Ingredients:
2/3 cup sliced almonds |
1 1/4 cups brazil nuts - coursely chopped |
1 1/2 cups coconut |
1 cup dried apricots - chopped |
1 cup currants |
1/4 cups all-purpose flour |
250g white chocolate - melted |
1/2 cup apricot jam |
1/2 cup honey |
1 tblspn icing sugar |
Directions:
1. Pre-heat oven between 325 - 350 degrees 2. Lightly grease 19cm x 29cm baking pan 3. Line base with wax paper & grease paper 4. Combine melted chocolate, jam & honey in a small bowl - set aside 5. Combine nuts, coconut, fruit & flour in a large bowl 6. Stir in chocolate mixture until well combined 7. Spread evenly in prepared pan 8. Bake 45 mins or until a toothpick inserted in center comes out clean 9. Cool in pan on wire rack. 10. When completely cool, dust with the 1 Tblspn icing sugar 11. Can be kept in the fridge for 1 week or in the freezer for 2 months |
