White Chocolate Cranberry Oatmeal Cookies |

A delightful recipe, the cookies come out best using a baking mat or lighter colored cookie sheet. Ingredients:
1 cup shortening |
1 cup sugar |
1 cup brown sugar |
2 eggs |
1 teaspoon vanilla |
1 1/2 cups flour |
1 teaspoon salt |
1 teaspoon baking soda |
3 cups instant oats |
1 cup dried cranberries |
1 cup white chocolate chips |
1 cup nuts (replacement for one of the add-ins above) (optional) |
Directions:
1. Preheat oven to 350 degrees F. 2. Cream shortening & sugars. 3. Blend in eggs & vanilla. 4. Sift in flour, salt & soda. 5. Fold into creamed mixture along with oats, cranberries, & chocolate chips (or other optional ingredients). 6. Roll into balls & place on greased cookie sheet. 7. Flatten with fork. 8. Bake 10-12 minutes (less for dark cookie sheets). |
