White Chocolate-Cranberry Creme Brulee |

Ingredients:
2 cup(s) whipping cream |
4 ounce(s) white chocolate |
1 teaspoon(s) vanilla extract |
5 egg yolks |
0.5 cup(s) sugar |
0.5 whole berry cranberry sauce |

Directions:
1. Preheat oven to 300°. Combine 1/2 cup 2. cream and chocolate in a heavy saucepan; 3. cook over low heat, stirring constantly, 2 4. to 3 minutes or until chocolate is melted. 5. Remove from heat. Stir in vanilla and 6. remaining 11/2 cups cream. 7. Whisk together egg yolks and 1/4 8. cup sugar until sugar is dissolved and 9. mixture is thick and pale yellow. Add 10. cream mixture, whisking until well 11. blended. Pour mixture through a fine 12. wire-mesh strainer into a large bowl. 13. Spoon 11/2 Tbsp. cranberry sauce 14. into each of 6 (4-oz.) ramekins. Pour 15. cream mixture into ramekins; place 16. ramekins in a large roasting pan. Add 17. water to pan to depth of 1/2 inch. 18. Bake at 300° for 45 to 55 minutes or 19. until edges are set. Cool custards in pan 20. on a wire rack 25 minutes. Remove ramekins 21. from water; cover and chill 8 hours. 22. s. Preheat broiler with oven rack 5 23. inches from heat. Sprinkle remaining 24. sugar over ramekins. Fill a large roasting 25. pan or 15- x 10-inch jelly-roll pan 26. with ice; arrange ramekins in pan. 27. Broil 3 to 5 minutes or until sugar 28. is melted and caramelized. Let stand 5 29. minutes. Garnish, if desired. 30. Test Kitchen Tip: Filling the roasting pan 31. with ice before broiling keeps the custards 32. cool while caramelizing the tops. |
