White Chocolate Coconut Cake |

this is an easy cake to make and looks very elegant.... this recipe come from the Gooseberry Patch series of cookbooks Ingredients:
1 cup butter |
2 cups sugar |
4 eggs, beaten |
4 ounces white chocolate , melted |
2 1/2 cups flour |
1 teasp. baking powder |
1 teasp. vanilla extract |
1 cup buttermilk |
1 cup pecans or walnuts, chopped |
1 cup flaked coconut |
Directions:
1. cream butter and sugar with an electric mixer 2. add eggs and melted chocolate, blend well 3. add flour,baking powder, vanilla, buttermilk, chopped nuts and the coconut. blend well 4. pour into 3 greased 9-inch round cake pans 5. bake at 350'F for 35 minutes 6. cool cake 7. ice with white chocolate icing* or your favorite icing and garnish with white chocolate or milk chocolate curls 8. * recipe to follow |
