These will delight all chocolate lovers Ingredients:
2 1/2 all-purpose flour |
1 cup packed brown sugar |
1/3 cup unsweetened cocoa powder |
2 tsp baking soda |
1/2 tsp salt |
1 1/3 cups buttermilk |
6 tblspn butter or margarine - melted |
2 eggs - beaten |
1 1/2 tsp vanilla |
1 1/2 cups white baking chocolate - chopped into small chunks |
Directions:
1. Pre-heat oven to 400 degrees F 2. Grease 12 (3 1/2 ) muffin cups - set aside 3. In a large bowl combine flour, sugar, cocoa, baking soda & salt 4. In a small bowl, combine buttermilk, melted butter, eggs & vanilla until blended 5. Stir into flour mixture just until moistened 6. Fold in white chocolate 7. Spoon into prepared muffin cups, filling 1/2 full 8. Bake 25 - 30 mins or until a toothpick inserted in the center comes out clean. 9. Cool in pan on wire rack for 5 mins 10. Remove muffins from pan & cool completely on wire rack |
