White Chocolate Chip Strawberry Fudge Drop Cookies |

These are great soft chocolate cookies with a slight strawberry flavor and white chips. They are always on my holiday cookie list. Ingredients:
2/3 cup butter, softened |
1 cup sugar |
1 large egg |
1/2 teaspoon strawberry extract |
1/2 cup buttermilk |
6 tablespoons pureed frozen sweetened strawberries |
1 3/4 cups flour |
6 tablespoons unsweetened cocoa |
3/4 teaspoon baking soda |
1/2 teaspoon salt |
1 1/2 cups white chocolate chips |
Directions:
1. Preheat oven to 350°F.
2. Combine butter, sugar, egg and strawberry extract in a large bowl.
3. Beat at medium speed until well blended.
4. Beat in buttermilk and strawberry puree.
5. Combine flour, cocoa, baking soda and salt in a medium bowl and mix into creamed mixture at low speed until blended.
6. Stir in white chocolate chips.
7. Drop by rounded tablespoonfuls about 2-inches apart onto greased cookie sheets.
8. Bake 10-12 minutes or until tops spring back when touched lightly.
9. Remove immediately to wire racks to cool completely.
