White Chocolate Chip Lemon Cookies |

This was on the back of the box for the Wilton tiered cooling racks that I bought on clearance. I'm putting it here for safe keeping. Ingredients:
1/2 cup butter, softened |
1 cup sugar |
1 egg |
1 tablespoon milk |
1 teaspoon lemon juice |
1/2 teaspoon vanilla |
1 3/4 cups flour |
1 teaspoon baking powder |
1/4 teaspoon salt |
1 cup white chocolate chips |
1 1/2 teaspoons grated lemon zest |
1/4 cup coarsely chopped nuts (optional) |
Directions:
1. Preheat oven to 350°F 2. In a large bowl, cream butter and sugar until light and fluffy. 3. Add egg, milk, lemon juice and vanilla; mix well. 4. Combine flour, baking powder and salt. 5. Add to butter mixture; mix well. 6. Stir in white chocolate chips, lemon zest and nuts (if using). 7. Drop by tablespoonfuls or cookie scoop onto ungreased cookie pan. 8. Bake 12-15 minutes or until edges are a light golden brown. 9. Cool 3 minutes on pan; remove and cool completely on cooling rack. |
