This is a different take on Chili with a great flavor. This is not a spicy dish. Ingredients:
4 c. cooked cubed chicken (can be from a broiled chicken from sam's club) |
3/4 c onion |
4 garlic cloves |
1/4 t pepper of choice |
3 cans white beans (great northern) |
2 cans chopped green chilis |
2 t. ground cumin |
1 t. oregano |
salt to taste |
1-2 lg cans of chicken broth (use according to how thick you like your soups) |
the following ingredients are used for garnishing the soup. use |
a handful of crunched corn chips |
1 tbls. salsa |
1 tbls. sour cream |
2 tbls. monterey jack cheese |
for a little extra southwestern flavor, may add the juice of 1/2 lime to a bowl of soup. |
Directions:
1. Put following ingredients in a large pot to cook on medium heat: 2. Broth, cumin, oregano, pepper 3. Chop the onion, add to pot 4. Mince garlic, add to pot 5. add chilis, chicken, and beans 6. Cook mixture. 7. Add salt to taste. 8. Adjust heat to get the desired thickness of soup. 9. Do not overcook, beans will get mushy. 10. When done, add desired garnishes that are listed. |
