Tasty white' chili made with chicken and beans instead of beef. Delicious and fun to accessorize your own bowl with different toppings. Bon appetit! Ingredients:
1 tbsp olive oil |
2 med onions, chopped |
2 cloves garlic, minced |
3 cups chicken broth |
2 tbsp fresh cilantro (or 1/2 tsp ground coriander) |
2 tbsp lime juice |
1 tsp cumin |
1/2 tsp oregano |
1/4 tsp red pepper sauce |
1/4 tsp salt |
1 can (11oz) whole kernel corn, drained |
1 can (15-16oz) white kidney beans |
1 can (15-16oz) great northern beans or garbanzo beans |
2 cups chopped cooked chicken breast |
Directions:
1. Heat oil in large frying pan over med heat. Cook onions and garlic until onions are tender. 2. Stir in remaining ingredients except chicken. Heat to boiling; reduce heat. Simmer 20 minutes. 3. Stir in chicken; simmer until hot. 4. Serve with several bowls of toppings' on the side: chopped green onions, diced tomatos, sliced avocado, shredded cheese, fat-free plain yogurt, crushed tortillas- for sprinkling over the chili.
