This is a wonderful soup for a cold winter day! Or any time you want something alittle hot and spicy! I love chicken with just about anything - so why not a chicken chili?!?! Ingredients:
4 (16oz) cans northern beans |
2 medium onions |
1 tbsp olive oil |
3 (4.5oz) cans green chiles, undrained |
4 cloves minced garlic |
2 tsp ground cumin |
2 tsp dried oregano |
6 cups chicken broth |
5 cups cooked, chopped chicken breast |
3 cups shredded pepper jack cheese |
1/2 tsp pepper |
1 cup chopped fresh cilantro |
Directions:
1. Saute onions in skillet with olive oil on med-high heat until tender 2. Add green chiles and next 3 ingredients 3. Cook 2 minutes, stirring constantly 4. Add beans, broth, and onion mix in large soup kettle with chicken and simmer |
