A quick and easy chicken chili for those who want a change of pace.
Ingredients:
4 tbsp. of olive oil
4 skinless, boneless chicken breasts
1 onion chopped
1 1/4 cup chicken broth
1 ( 4 oz) can diced green chilies
1 teaspoon garlic powder
1 teaspoon ground cumin
1/2 teaspoon oregano
1/2 teaspoon cilantro
1/8 teaspoon cayanne pepper
1 ( 15 oz cn) cannellini beans(drainned, rinsed)
2 green onions, chopped
2 ounces monterey jack cheese
Directions:
1. 1. Heat oil ( medium heat) cook chicken and onion for 4-5 minutes.
2. 2. Stir in chicken broth, chilies, garlic powder, cumin, oregano, cilantro and cayanne pepper.
3. 3.Reduced heat simmer for 15-20 minutes.
4. 4.Sir in the beans and simmer for 5 minutes.
5. 5.Garnish with green onions & shredded cheese
