A quick and easy chicken chili for those who want a change of pace. Ingredients:
4 tbsp. of olive oil |
4 skinless, boneless chicken breasts |
1 onion chopped |
1 1/4 cup chicken broth |
1 ( 4 oz) can diced green chilies |
1 teaspoon garlic powder |
1 teaspoon ground cumin |
1/2 teaspoon oregano |
1/2 teaspoon cilantro |
1/8 teaspoon cayanne pepper |
1 ( 15 oz cn) cannellini beans(drainned, rinsed) |
2 green onions, chopped |
2 ounces monterey jack cheese |
Directions:
1. 1. Heat oil ( medium heat) cook chicken and onion for 4-5 minutes. 2. 2. Stir in chicken broth, chilies, garlic powder, cumin, oregano, cilantro and cayanne pepper. 3. 3.Reduced heat simmer for 15-20 minutes. 4. 4.Sir in the beans and simmer for 5 minutes. 5. 5.Garnish with green onions & shredded cheese |
