2 cups chicken broth, divided |
2 (15 ounce) cans great northern beans, rinsed |
1 cup chopped bell pepper |
1 cup chopped onion |
2 teaspoons minced garlic |
2 teaspoons jalapeno chili, minced |
2 teaspoons minced ginger |
1 teaspoon dried thyme |
1 teaspoon dried oregano |
1 tablespoon cornstarch |
salt and pepper |
Directions:
1. Combine all ingredients, except 1/2 cup chicken broth, cornstarch, salt and pepper in slow cooker. 2. Cover and cook on low for 6-8 hours. Cook on high 10 minutes, stirring in combined remaining stock and cornstarch, stirring 2-3 minutes. |
