This chili is great served over brown rice and finished with a little shredded cheese and sour cream. Ingredients:
3 10 1/2 ounce cans of chicken broth |
19 ounce can of cannelli beans |
2 (16 ounce) can of navy beans |
4 cups cooked chicken breast |
1 cup diced onion |
16 ounces frozen white corn |
4 ounces canned chilies |
1 teaspoon cumin |
3/4 teaspoon oregano |
1/4 teaspoon red pepper flakes |
Directions:
1. Sautee onions until tender, then put into large stock pot 2. Rinse one can of navy beans and puree in blender with a little chicken broth, then add to pot 3. Rinse remaining 2 cans of beans 4. Place all ingredients in pot and let simmer until done, about 1/2 hour 5. Serve over rice |
