This is a healthy change from your regular ground beef chili! Also a great way to use up that leftover chicken or turkey for a nice warm meal during those cold wintry nights!. Ingredients:
1 lb dry white beans |
6 cups chicken broth |
2 tsp diced garlic |
2 medium chopped onions |
1 can diced tomatoes drained |
1 7 oz cans diced green chilis |
1/2 cup diced green pepper |
2 tsp ground cumin |
1 1/2 tsp oregano |
1 tsp ground cloves |
1/4 tsp cayenne pepper |
4 cups chopped cooked chicken |
3 cups chicken broth |
Directions:
1. In a large kettle combine dry white beans, chicken broth, diced garlic cloves, and 1 chopped onion. 2. Bring to a boil, reduce the heat, and simmer, covered, until the beans are tender, about 2 to 3 hours. 3. In a large skillet, saute 1 chopped onion and peppers until tender. 4. Add green chilis, tomatoes, cumin, oregano, cloves, and cayenne pepper 5. Add cooked, chopped chicken and chicken broth. 6. Simmer for 1 hour. 7. Serve hot with your favorite cheese on top and flour torillas, tortilla chips or oyster crackers on the side! 8. Add a dollop of sour cream and/or guacamole on top if desired! |
