This is such a comforting soup. It's rich and creamy so good as a lunch or dinner with a nice salad. Enjoy
Ingredients:
3 tablespoons butter
1 medium white onion finely chopped
1 shallot finely chopped
1 medium carrot finely chopped
4 ribs celery finely chopped
1 clove garlic finely chopped
2 tablespoons all purpose flour
3 cups chicken stock
2 cups half-and-half
3 tablespoons dry sherry
1/4 teaspoon salt
1 teaspoon freshly ground black pepper
1/4 teaspoon cayenne pepper
12 ounces white cheddar cheese shredded
chopped fresh chives for garnish
Directions:
1. Heat butter in soup pot over moderate heat and sauté chopped vegetables 5 minutes.
2. Stir in flour and cook stirring frequently for 2 minutes.
3. Whisk in the chicken stock and half-and-half and bring to a boil.
4. Reduce heat and simmer 3 minutes then remove from heat.
5. Stir in sherry, salt, pepper and cayenne.
6. Add cheese a little at a time whisking constantly until cheese has melted.
7. Serve immediately garnished with chopped chives.
