WHITE CHEDDAR SCALLOPED POTATOES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Laughlin Estate in Cedar Hill, Texas in 1994. Ingredients:
6 tablespoons unsalted butter |
1/2 cup all purpose flour |
4 cups chicken broth |
3 cups coarsely grated white cheddar cheese |
4 pounds boiling potatoes |
1 cup sourdough bread crumbs |
Directions:
1. Preheat oven to 350 and butter 2 quart shallow baking dish. 2. In heavy saucepan melt butter over moderately low heat and whisk in flour. 3. Cook roux whisking 3 minutes then add broth in a stream whisking. 4. Bring sauce to a boil whisking then simmering then whisking until thickened. 5. Remove pan from heat and whisk in cheese, salt and pepper then whisk until cheese is melted. 6. Peel potatoes and slice 1/8” thick. 7. In prepared dish make 5 layers of potatoes and sauce beginning with potatoes ending with sauce. 8. Sprinkle with bread crumbs and bake uncovered for 1 hour. |
