White Cheddar Mashed Potatoes Dated 1977

WHITE CHEDDAR MASHED POTATOES DATED 1977 This recipe came from an estate sale. I obtained it when I purchased the family collection from the Ball Estate in Garland, Texas in 1989. These are fabulous. Another one that will always be served in my house.
Ingredients:
5 pounds russet potatoes peeled, rinsed and cut into chunks
1/4 pound salted butter
1/2 pound sharp white cheddar cheese grated
2 ounces sour cream
4 ounces heavy cream
1 tablespoon salt
1 teaspoon white pepper
Directions:
1. Bring a pot of salted cold water to a boil.
2. Add potatoes and simmer 15 minutes then drain in colander for 5 minutes.
3. Place drained potatoes in a mixing bowl with paddle attachment and mix until smooth.
4. Remove paddle attachment and replace with whip attachment.
5. Whip in soft butter and sour cream on low speed just long enough to incorporate ingredients.
6. Move up to medium low speed for 15 seconds.
7. Add seasonings and cheese then whip on medium low for 10 seconds.
8. Add cream then whip on low until incorporated.
9. Turn up speed and whip until everything is incorporated for about 20 seconds.
